Sharing one of my fav easy go-to lunch salads! So quick and easy and so delicious ๐
Ingredients:
โข 1 bunch chopped kale (I mixed kale and romaine)
โข ยผ cup fresh lemon juice
โข ยผ cup olive oil
โข 2 garlic cloves crushed
โข Salt and pepper to taste
โข red chili pepper flakes to taste
โข ยผ โ ยฝ cup grated Parmesan cheese
โข ยผ cup toasted bread crumbs (optional)
โข Grilled chicken, salmon, shrimp or protein of choice
Instructions:
โข Whisk together lemon juice, lemon zest, olive oil, garlic, chili flakes, salt and pepper in small bowl
โข Add kale, romaine, spinach, whatever youโre using to a large bowl
โข Pour dressing over kale and add half of the cheese
โข Toss to coat evenly
โข Top with remaining cheese and breadcrumbs
โข Add protein of choice and enjoy ๐
